Prepare the lime topping

Submerge the sheets of gelatin in a bowl of cold water. In a small saucepan, mix the water, sugar and lime zest. Heat it until the sugar has dissolved. Remove the gelatin from the water and add to the saucepan, along with the green food coloring, and mix well. Strain the mixture and allow to cool.
