Before refrigeration, drying and salting were the only ways to preserve meat for considerable periods of time. Native American tribes shared their methods with European settlers, and jerky spread through the settlements. As they moved West, settlers loaded up their wagons with the meat, and jerky's popularity grew. Now, we can find all sorts of flavored jerky in stores and gas stations across the country.
