Key Lime Pie

Key lime pie originated in Key West, Florida, but it has fans all around the country. With a delicate balance of sweet and tart, this pie is often lumped together with lemon meringue, but make no mistake—key lime pie is its own thing. Egg yolks and condensed milk thicken the filling naturally when mixed with the key lime juice, but today the pie is typically baked as well. We think it hasn't caught on elsewhere because of the lack of availability of key limes in other parts of the world.
