Salad with fresh fruit is a more than welcome combination in the summertime. This dish is so simple you don't even need to follow a recipe. Simply add a pile of fresh arugula to a plate, and top with peeled, thinly sliced citrus fruits like grapefruit, oranges, blood oranges and tangerines. Sprinkle with a handful of pine nuts and crumbled feta, then drizzle with a simple lemon vinaigrette.
