Mushrooms
Mushrooms are another earthy, savory and sometimes sweet-tasting ingredient, with a thick, "meaty" texture, which makes them a great plant-based alternative to meat. They also impart a subtle umami flavor, which helps to elevate the overall complexity in your cooking. Found in both dried and fresh varieties, mushrooms can be sautéed, stewed, stir-fried, roasted, grilled, steamed or boiled. Depending on the type of mushroom you use in your dishes, they can be stronger or milder in flavor and come in all sorts of shapes, colors and sizes.
Cooking ideas: White button/crimino/baby bella/shiitake - sliced and sautéed in olive oil or butter with fresh chopped herbs; roasted whole on their own or stuffed; quartered or sliced and tossed into stews or soups; added to stir fries and pastas; sliced raw and used in salads or marinated. Portobello - baked or grilled whole; stuffed and roasted; used in place of beef patties for burgers; roasted, chopped and used in salads; thinly sliced and roasted, then used as fillings for wraps, fajitas, tacos or burritos; chopped and stir-fried.
