Potatoes

Potatoes are available year-round, but they're especially popular in the fall and winter months, when everyone's in the mood for cozy meat roasts, rich holiday meals and warming soups—all of which can be made with the multitude of potatoes available. Like many of the ingredients on this list, the dishes you can prepare with them often depend on the variety you choose. New potatoes, white or baby red potatoes are great for boiling, russets are good for baking, russets and white are best for frying, most potatoes are delicious roasted, and russets or yellow potatoes taste wonderful mashed.

Cooking ideas: boiled and mashed with cream and butter; roasted with whole meats like roast chicken or roast beef; roasted with other fall veggies and herbs; sliced or chopped and sautéed; cut into matchsticks or wedges and deep fried; cooked and blended into soups; boiled and chopped for salads; shredded and used to make hash browns; chopped and added to stews; the skins can be re-used to make chips; large baking potatoes can be roasted or microwaved and loaded with toppings.
