Preheat oven to 350F. Spray a 2 quart casserole dish with vegetable cooking spray
- 8 slices day old whole wheat bread, cut into 1/2 inch cubes (about 4 cups)
- 2 medium red delicious apples, peeled, cored and chopped (about 1 1/2 cups)
- 1/4 cup golden raisins
- 2 cups skim milk
- 1/2 cup maple syrup
- 2 large eggs, lightly beaten
- 1 tsp vanilla
- 1/4 tsp ground cinnamon
- 1 egg white
- 1 Tbsp sugar
- light frozen whipped topping thawed for garnish

Seed peppers. Dice or slice into thin julienne strips, then cut into 1-inch pieces
- 2 large peppers (preferably 1 red and 1 yellow)
