Christmas is the perfect time to roll out one of these delights made with airy chocolate mousse for the filling. Make a chocolate Genoise (sponge cake) with 3/4 cup sugar, 2/3 cup flour, 4 eggs and 1/4 cup cocoa powder. Once the base is cooked, roll it up to give it its shape. For the chocolate mousse: Break 1 2/3 cups chocolate and melt it in a saucepan with 1 cup cream. Store in the fridge to cool. Once it's ready, beat the chocolate mousse mixture with an electric hand mixer, then spread it gently onto the Genoise and roll up. All that's left to do is decorate the cake with sprinkles, ground nuts or any other toppings you desire.
