These salted caramel thumbprint cookies are easy to make and super delicious!
INGREDIENTS:
- 1/4 cup / 50g of softened butter
- 1 egg (divide the yolk and white)
- 1/4 cup / 50g of sugar
- Pinch of sea salt
- 1 cup / 150g of flour
- 1 cup / 100g of chopped nuts
- Salted caramel
- Melted dark chocolate
METHOD:

In a bowl, mix together the butter, egg yolk, sugar, and salt.

Add the flour and mix. Roll into a ball.

Chill for 30 minutes.

Remove from refrigerator. Divide the dough and roll into 1-inch balls.

Dip each ball in egg yolk, and then roll in chopped nuts.

Place on baking sheet (lined with parchment paper), and press your thumb into the center.

Bake at 340°F/170°C for 12 minutes, or until golden.

Remove from oven and let cool.

Pour the salted caramel into the center groove,and drizzle with dark chocolate.

- 2 15oz cans of black beans-drained
- 1 C white corn-thawed
- 1 Red diced Belled pepper
- 1/8 C red wine vinegar
- 1/2 C olive oil
- 1 large clove of garlic-crushed/minced
- 1 anaheim chili-seeds removed
- 1/4 C fresh cilantro-chopped
- 1/8 tsp cayenne pepper
- 1/4 tsp cumin powder
- 1/2 tsp salt
- 1 avocado diced
- 1 tomato, diced

Mix it all together, taste, add if needed
- 2 cups frozen or fresh corn
- ¼ cup fresh cilantro
- 2 tsp finely chopped jalapeño, with or without seeds
- 1-2 tsp sliced green onions (just the tops)
- ½ tsp kosher salt
- 2-3 tsp lime juice

- DRESSING
- 1/2c white vinegar
- 1c sugar
- 1c olive oil
- SALSA
- 2 cans white sweet corn (drain)
- 1 can black beans (drain and rinse)
- 1 can black eyed peas (drain)
- 4 stalks of celery chopped
- 1 4oz can chopped jalapenos (drain)
- 1 4oz jar pimentoes (drain)
- 1/2 - 1 onion chopped
