Green apple and prosciutto salsa over cod

  • 1 green apple
  • 2 Tbsp fresh cilantro, chopped
  • 1/2 medium onion, chopped finely
  • 2 slices chopped prosciutto and/or small hunk of diced fried pancetta
  • juice of 1/2 lime, other half reserved
  • 1 tsp maple syrup

  • Salsa
  • This is the original recipe. I usually do a double recipe and still only use 2 cups of sugar (so 1 cup for a single recipe). This year I did it with jalapenos, but the one you had was pretty much this recipe exactly. You do need to do the long salt bath to remove water from the salsa. The veggies I just do by look as I am too lazy to do them exactly.
  • Salsa
  • • 12 ripe tomatoes
  • • 1.5 green peppers diced
  • • 2.5 cups of diced celery
  • • 2 cups of chopped onion
  • Pour 1/3 cup of salt over veggies and let stand 8 hrs then drain and rinse
  • Mix 2 cups white sugar
  • 1.5 cups vinegar
  • 1/2 tsp cayenne pepper
  • 1/2 tsp crushed chiles
  • 1 tsp mustard seed
  • 1/2 tsp chives
  • Combine all ingredients in a large pot, bring to a slow boil over medium heat. Cook for 15 minutes, add 4oz can of tomato paste. Cook another 15 minutes then bottle.

  • 16 cups Tomatoes
  • 5 cups Green Peppers
  • 5 cups Red Peppers
  • 8 Cloves of Garlic
  • 8 cups Onion
  • 1 can Hot Peppers with juice (2oz.) or 6 Jalepenos
