" I hope that my blog has big things in store for it, but if not, I still love what I do & wouldn't change that."

Hello Karey @ Nutty About Health, so tell us...

When did you begin your blog, and what inspired you to start it?

I started my blog in March 2012 under the name Runs With Spoon, which I later changed to Nutty About Health. I was inspired by bloggers like www.PBFingers.com & figured that I could share my weight-loss story & hopefully inspire others.

What is your earliest food memory?

One of my earliest food memories is probably the giant, deliciously cheesy pizza we used to get from the local pizza joint, Luigi's. It was AMAZINGLY cheesy & so good!

Are you involved in the blogging community - how do you attract new readers?

I try to get involved in the blogging community by creating a Nutty About Health Facebook page, posting my latest posts on Facebook & Twitter (@NuttyAboutHlth), & posting daily on Instagram (nuttyabouthealth). I try to post interesting articles on Twitter and/or Facebook from time to time & connect & engage with my readers. I love to make new friends!

Do you have a secret weapon in the kitchen?

My pancakes! I LOVE making pancakes for breakfast, usually from flaxseed meal & egg whites, or making them using coconut flour. I top them with a ton of fruit & some peanut butter. So good!! I'd have to say that flaxseed is a secret weapon in the kitchen, you can do so much with it!

What is/are your go to recipe(s) if you’re preparing a last minute dinner or party?

If it's a last minute gathering I'd probably opt to bring a healthy fruit and/or veggie tray. If I have time, I'd make some healthified cookies that are sugar-free & use almond or coconut flour.

If you could be a contestant or guest on any cooking show what show would you choose?

If I were a guest on a cooking show I'd choose to be on Rachel Ray because she's funny & so down-to-earth. I also love that most of her recipes are great for every day type of people, not just kitchen magicians.

You're probably the biggest fan of peanut butter we've ever come across, what's the most unusual thing you've ever eaten it with?

It's hard to pinpoint one thing since I love to eat peanut butter with just about everything. I did once try to put some honey peanut butter on some oat bran mixed with brewer's yeast once... well, that was... interesting.
I love to eat PB on pancakes, waffles, oats, carrots, apples, squash, cottage cheese, yogurt, ice cream... the list just goes on & on.

Is there any dish, ingredient or type of food you refuse to cook or eat?

I refuse to eat venison, duck, lamb, veal, or any other unusual type of animal. I was a vegetarian for a bit for ethical reasons & just find it hard to add to the list of animals I've eaten. Yes, I do eat chicken, beef, turkey, & pork since they're complete proteins & they taste good, but I just don't like the whole thought of it all.

What are your goals for this blog? Where would you like to see it in the next year? Five years?

I would love to see my blog grow. I'd love to meet more people, be able to work with more brands, & hopefully inspire/motivate others. It'd be amazing if it could even someday lead to other writing opportunities.

Anything else you would like to share?

Blogging is a great love of mine & a hobby for me. I love it when someone tells me they love my story, or that I helped motivate them or inspire them, or even that they made one of my recipes & loved it. It makes me smile. I hope that my blog has big things in store for it, but if not, I still love what I do & wouldn't change that. It's a creative outlet & I love sharing my journey back through school to become a RD.
Thank you for taking the time to interview me, it's been an honor.
