Ukrainian Babka

To Make the Sponge: Scald the milk and cool it to 110 degrees
- Sponge:
- 1 cup milk
- 1/3 cup all-purpose flour
- 2 teaspoons sugar
- 1/2 cup lukewarm water
- 3 packages active dry yeast

- Dough:
- 10 large egg yolks
- 2 large eggs
- 1 teaspoon salt
- 1 cup sugar
- 8 ounces (2 sticks) melted butter
- 2 teaspoons vanilla
- Grated zest of 1 lemon
- 6 cups all-purpose flour
- 1 cup light or dark raisins (optional)
Pyrohy Dough

In a small glass, stir together sugar and yeast into lukewarm water and let stand 10 minutes
- 1 teaspoon sugar
- 1/4 cup lukewarm water
- 1 package active dry yeast
- 1 cup scalded milk
- 2 ounces (1/2 stick) room-temperature butter
- 2 large beaten eggs
- 1 1/2 teaspoons salt
- 1/4 cup sugar
- 4 1/2 to 5 cups all-purpose flour

Make the Dough: In a large bowl, mix flour and salt

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 large egg or 2 large egg yolks
- 1/2 cup water (or more, as necessary)

Combine pork, beef, eggs, peperivka, allspice and salt
- 1 pound ground pork
- 1/2 pound ground beef chuck
- 2 large eggs, beaten
- 2 teaspoons peperivka (see below)

Ukrainian Sauerkraut Soup

Note: If using dried mushrooms, place them in a heatproof container
- 1 pound smoked or fresh pork spare ribs
- 10 cups water
- 1 large chopped onion
- 1 clove minced garlic (optional)
- 1 bay leaf
- 6 black peppercorns
- 1 large peeled and sliced carrot
- 1 large peeled and diced potato
- 1 ounce dried mushrooms or 1/2 cup fresh sliced mushrooms
- 2 pounds sauerkraut drained and rinsed or unrinsed, to taste
- 2 tablespoons all-purpose flour
- 2 tablespoons sour cream

- Chopped dill or parsley
