Canyon Casserole

1. Preheat oven to 400. Spray an 8 inch baking dish with cooking spray and set aside
- 1 pound ground beef
- 1 ounce pkg taco seasoning
- 14.5 ounce can diced tomatoes, undrained
- 14.5 ounce can whole kernel corn, drained
- 1/2 cup water
- 1 large egg
- 1 cup Martha White Self Rising White Buttermilk Corn Meal Mix (can use yellow self rising corn meal mix)
- 1/2 cup milk
- 2 tablespoons vegetable oil
- 1 cup shredded cheddar cheese
Chicken Rollups

1. Preheat to 350. Spray 9x13 dish with cooking spray
- 2 (8oz) cans of crescent dinner rolls
- 1 (10 ¾) can cream of chicken soup
- ¾ cup of grated cheddar cheese
- ½ cup of milk
- Filling:
- 4 oz of soft cream cheese
- 2 tblsp butter (soft, not melted)
- ½-1 tsp garlic powder
- 1 tsp minced onion flakes
- 2 c cooked chicken
- ½- ¾ c grated cheese
- ½ tsp seasoning salt
- ½ tsp ground black pepper
- 2 tbsp milk
- 1-2 c shredded cheese
John Wayne Casserole

Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside
- 2 pounds ground beef, cooked and drained
- 1 (1.25-ounce) packet taco seasoning
- 4 ounces sour cream
- 4 ounces mayonnaise
- 8 ounces Cheddar cheese, shredded and divided
- 1 yellow onion, sliced
- 2 cups biscuit mix
- 2 tomatoes, sliced
- 1 green bell pepper, sliced
- 1 (4-ounce) can sliced jalapeno peppers

- 2 Tbls. butter
- 1/2 Tbls. olive oil
- 1/2 cup Franks Wing Sauce
- 1/2 tsp. celery seed
- pepper to taste
- 1/2 C. thinly sliced celery
- blue cheese crumbles
- ranch dressing
- 2 heads of lettuce

Mix all chopped ingredients in a bowl
- 1/2 c cooked chopped chicken breast
- 3 tbsp chopped apple
- 2 tbsp chopped grapes
- 2 tbsp natural peanut butter
- 1 tbsp greek yogurt
- romaine lettuce
Tuna Avocado Lettuce Wraps

In small bowl combine mashed avocado with tuna
- 1 - 170g canned tuna in water, drained
- 1/2 avocado, mashed
- 1 tomato, sliced and then halved
- 4 hearts of Romaine lettuce leaves
Mexican Chicken Lettuce Wraps

Heat a small amount of oil in a large skillet
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 3 cups cooked shredded chicken
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 4-ounce can chopped green chilies
- 1 1/2 cups salsa
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Juice of 1 lime
- Bibb, Boston, or iceberg lettuce leaves
- Shredded cheese and sour cream for topping
Cheesy Chicken Rice

Place chicken in bottom of slow cooker
- 4 boneless skinless chicken breasts
- 1 large onion, chopped
- 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
- 1 cup cheddar cheese
- 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
- 1 -15 ounce can whole kernel corn, drained
Taco Ring

Preheat oven to 375°. Brown the ground beef, then drain
- 1 lb. ground beef
- 1 package (1.25 oz) taco seasoning mix
- 1 c. (4 oz) shredded cheddar cheese
- 2 tbs water
- 2 8-oz packages refrigerated crescent rolls
- 1 medium green bell pepper
- 1 c. salsa (optional)
- 3 c. lettuce, shredded
- 1 medium tomato, diced
- ¼ c. onion, chopped
- ½ c. pitted ripe olives
- sour cream
Baked "Fried" Chicken

Place thawed chicken breasts in a bowl of buttermilk, cover, and let soak 20-30 minutes in the refrigerator
- 6 boneless, skinless chicken breast
- 1 cup all-purpose flour
- ½ teaspoon salt
- 1 tablespoon seasoned salt ¾ teaspoon pepper
- 2 teaspoon paprika
- ½ stick butter (or ¼ cup)
- Buttermilk
- 1 gallon-size Ziploc bag (optional)
