Farmer's Junk Drawer Quinoa Salad

I was in charge of dinner last night
- 1/2 onion, chopped
- 1/2 tsp. granulated garlic
- 2 Tbsp. butter
- 3 Tbsp. sliced almonds, toasted
- 1/2 cup crumbled Feta cheese
- 1 1/2 cups frozen edamame, cooked al dente in boiling water for about 5-7 minutes, then cooled
- 2 1/2 cups corn kernels (cut it off left over corn on the cob, or use canned)
- 1 pint cherry tomatoes
- 1/8 cup finely chopped basil
- 1/4 cup finely chopped chives
- 2 cups torn up baby spinach leaves
- About 2 cups chopped cooked chicken (we get a rotisserie chicken to save time)
- 1 cup quinoa cooked in 2 cups chicken broth then cooled (follow my presoaking instructions above)
- Lemon Dijon Honey Dressing,
- makes 1 1/2 cups or so, store what's unused for another salad later in the week
- 1 Tbsp. white balsamic vinegar
- 1 Tbsp. Dijon mustard
- 2 Tbsp. honey
- 1/8 tsp. salt
- 1/2 a lemon, juiced (we sometimes add a touch more juice to give more of a bright punch)
- 1/8 tsp. garlic powder
- 2/3 cup canola oil
- Whisk all the ingredients, adding canola oil last. Whisk as you add the oil until emulsified. Store in an airtight container for a week or so.
Risotto Verde Provencal

- 1/4-1/3 cup chopped parsley
- 3-4 Tbsp. olive oil
- 2 lb. (32 oz.) spinach leaves
- 10 oz. button mushrooms, sliced
- 1/2 yellow pepper, cored and diced
- 4 1/2 cups chicken broth
- 3 onions, chopped
- 5 artichoke hearts in oil, drained and diced
- 3 cups short grain rice
- 1 1/2 Tbsp. Herbs de Provence
- 1 cup grated Parmesan cheese
- 1 tsp. garlic powder
- 1 tsp. salt
Ravioli Nudi, "Little Field Mice" or Spinach and Ricotta Dumplings

These dumplings have been a favorite at our house for a couple of years
- 2 6 oz. packages of ready-to-use baby spinach leaves
- 2 6 oz. packages regular ready-to-use spinach
- (you can replace 2 10 oz. packages of frozen spinach, defrosted, if you can't get fresh)
- 2 to 2 1/2 cups whole milk ricotta cheese
- 1 cup freshly grated parmesan cheese
- 1/2 cup (about) all-purpose flour
- 2 large egg yolks
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- Generous pinch of ground nutmeg
Lighten Up! Vegetable Lasagna

This lasagna I have made a few times, and it has become a favorite with the family
- 12 sheets oven ready lasagna noodles, preferably whole wheat
- 1 Tbsp. Olive oil
- 1 large onion, finely chopped
- 8 oz. mushrooms, sliced
- 1 medium zucchini, sliced 1/4 inch thick
- 1 medium yellow squash, sliced 1/4 inch thick
- 1/2 cup white wine
- 8 oz. baby spinach, washed
- 2 ripe tomatoes, finely chopped
- 4 garlic cloves, minced
- 1 Tbsp. dried parsley
- 1 Tbsp. dried basil
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 1 container (15 oz.) cottage cheese
- 2 cups shredded mozzarella (low fat if you wish)
- 1/4 cup Parmesan cheese plus 1/4 extra Parmesan cheese for assembly
- 1/8 tsp. ground nutmeg
- 1 large 24 oz. jar good quality tomato sauce
Slow Cooked Korean-Style Short Ribs

I cannot take credit for these short ribs, though I did help
- 3/4 cup soy sauce
- 1/2 cup Mirin (sweet Japanese rice wine)
- 1/2 cup packed dark brown sugar
- 1/4 cup rice vinegar
- 1/4 cup ketchup
- 1/8 cup oriental sesame oil
- 10 cloves garlic, minced
- 3 large green onions, chopped
- 1 Tbsp. Dijon mustard
- 2 Tbsp. ginger, minced
- 5 lbs beef short ribs (Approx. 2"-3" cuts)
- Sauce:
- 1 1/2 cups reserved crock pot cooking juice (fat removed, then strained)
- 1/4 cup ketchup
- 1/8 cup Hoisin sauce
- 1/8 cup brown sugar

- 1/2 cup sun dried tomatoes, chopped
- 12 oz. turkey breakfast sausage patties
- 3 1/2 cups whole milk
- 8 large eggs
- 2 tsp. fresh thyme, minced
- 1 1/2 tsp. salt
- 1/4 tsp. fresh ground pepper
- 1 lb. white sandwich bread, crusts trimmed, bread cut into 1-inch pieces
- 1/2 cup chopped onion
- 8 oz. sliced mushrooms (optional, but I highly recommend them)
- 1/2 cup grated Parmesan cheese
- 1 cup grated mozzarella cheese (packed)
- 1/4 cup crumbled soft, fresh goat cheese

Eggs Benedict Florentine

How do you make Sunday special? You gather your loved ones
- Hollandaise sauce:
- 3 large egg yolks
- 1/2 cup (1 stick) butter, melted
- 1 tsp. fresh squeezed lemon juice (or more to taste)
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1 teaspoon dried tarragon (optional)
- pinch of ground white pepper
- Spinach topping:
- 2 -3 tablespoons butter
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 cup onions, diced
- 1 cup mushrooms, diced
- 1 cup thawed frozen spinach, chopped
- 1/4 cup white wine
- 1/8 teaspoon salt
- 8 eggs, poached
- 8 slices Canadian bacon or smoked deli turkey
- 4 English muffins

Spiced Creme Brulee French Toast

I hate over scheduling my family over the weekends
- Caramel Sauce:
- 1 stick butter
- 1 cup firmly packed brown sugar
- 2 Tbsp. honey
- Bread & Eggs:
- 8-9" Country round loaf, (you may use LaBrea presliced Italian Country, but put two of the 1/2" slices together to make 1 " thick when filling your pan.)
- 5 large eggs
- 1 1/2 cups half & half
- 1 tsp. vanilla extract
- 2 tsp. Grand Marnier
- 1/4 tsp. salt
- 1/8 tsp. cinnamon

I am of the mindset that chocolate can be used in just about everything
- 1 1/2 cups flour
- 2 Tbsp. good quality dutch Cocoa
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 3/4 cup plus 2 Tbsp. sugar
- 1/4 cup vegetable oil
- 1/4 cup light sour cream
- 1/2 cup milk
- 1 large egg
- 1/2 tsp. pure vanilla extract
