Carol's Mashed Cauliflower

Cook cauliflower till tender
- Cauliflower -1 bag frozen or 1 head of raw, fresh
- Chicken broth/stock (optional)
- 1 tsp. chopped garlic
- 3 oz. room temperature cream cheese
- heavy cream
- 3 tbsp. butter
- salt/pepper
Cauliflower Pizza Crust

Cook cauliflower, drain and put through ricer
- 2 cups cooked cauliflower
- 2 cups low fat mozzarella
- 1/4 cup freshly grated parmesan (jar parmesan will not work)
- 2 eggs
- 1 tsp. parsley
- 1 tsp. garlic powder (or garlic salt)
Carol's Cheesecake

Combine melted butter and crushed cookies and press into springform pan or cupcake pan, or mini cupcake pan
- 3 pkgs. cream cheese (room temperature)
- 4 eggs (room temperature)
- 2 tsp. vanilla
- 2 tsp. lemon juice
- 1/2 cup sweetener (original recipe calls for 1 1/3 cups, but I don't like it too sweet)
- 1/4 cup greek yogurt (you can substitute sour cream for yogurt)
- 1 scoop unflavored protein powder (optional)
- Crust:
- 1 pkg. Murray's brand sugar-free pecan shortbread cookies
- melted butter (1/4-1/3 stick)
Pumpkin Sausage Soup

(Sounds awful…tastes delicious) Notes: Per 1-cup serving: 18 grams protein, 9 grams carbohydrate (2 grams diet...
- *1 lb. country sausage (mild or spicy…you call it)
- 1/2 cup diced onions
- 1 Tbsp. minced garlic
- 1 tsp. parsley
- 1/4 tsp. oregano
- 1/4tsp. thyme
- ½ cup chopped mushrooms (optional)
- 15 ounces pumpkin, canned
- 4 cups low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup plain Greek yogurt
Apricot Grilled Chicken

Blend mustard, preserves and ginger
- 1/3 cup Grey Poupon Honey Mustard (on a budget I used our store brand Dijon mustard and it was great)
- 3 tablespoons apricot preserves (I used Smuckers sugar-free)
- 1 tsp. ground ginger
- 4 skinless, boneless chicken breasts (I made six and just improvised on my mixture a bit)
Slow Cooked Turkey Chili

Combine all ingredients except cheese in your slow cooker
- 1 1/2 cup onions chopped
- 1/2 cup bell peppers chopped
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1 cup chicken broth
- 19 oz kidney beans drained and washed
- 2 cup turkey meat, skinless cooked and cubed (or try ground turkey)
- 1/2 cup Monterrey Jack cheese grated
Oatmeal Cookies with Walnut and Applesauce

Okay, there it is. If the batter seems to dry, you can add a little more applesauce or 1/4 cup of lowfat milk
- 2 cups quick oats
- 1 tsp. baking powder
- 1/4 tsp salt
- 2 eggs
- 1/2 cup unsweetened applesauce (I didn't have any so I poached a whole apple and mashed it)
- 4 tbsp. Splenda (I used Nature Sweet)
- 1 tsp vanilla
- 2 scoops unflavored protein powder
- 1-2 oz. raisins (I used a 1.25 size snack box)
- 1/4 cup chopped walnuts
- 1 cup almond flour (you could use whole wheat, but this is higher protein)
