Beef and Asparagus Stir Fried

- Condiments: hoisin oyster sriracha golden mountain seasoning maggie seasoning and black pepper.
Chicken Laab

Laab is generally a healthy dish, since it is made with the leanest parts of the meat
- 3 chicken breasts
- 1/3 cup of cilantro, finely chopped
- 1/3 cup of green onions, finely chopped
- 1/4 cup of mint leaves, finely chopped
- 1/4 cup of lemongrass (white part only), finely chopped
- 1 tbsp of chopped fresh or frozen Thai chilli peppers
- 2 1/2 tbsp of fish sauce
- 2 tbsp of fresh lime juice
- 1 tbsp of roasted rice powder
- Optional: 1/4 cup of shallots, finely chopped
- Note: shallots or onions weren't typically used in Hmong laab, but since I had a bunch around I added it and it added a nice flavor
Purple Sticky Rice with Coconut Milk

1. Pour the sweet and black rice into a large bowl
- 3 cups of sweet rice
- 1/3 cup of black rice
- 14 oz can of coconut milk
- water
Cellophane Noodles with Bamboo Stir Fry-Peev Choj

1.First thing is to soak noodles
- ½ bag of glass noodle
- 1 ib of ground pork
- 3 tb of chilli & soya bean sauce
- 3 tb of dark soy sauce
- 3 tb oyster sauce
- 2 green onions minced or 1 tb of onion powder
- 2 large garlic clove minced , or 1 tb fried garlic, or 3/4 tb of garlic powder
- ¼ tsp salt, more if desire
- 2 tb of fish sauce
- 2 tb of ground black peppper
- 1 batch of cilantro
- 1 canned large bamboo shoots, shredded
- 1 cup of peanuts
- 4 TB of oil for stir frying
- Optional: 1 TB of sriracha sauce
Hmong Cucumber Drink - Dib Kaus

1.Rinse the cucumber and cut in half lengthwise
- 1 hmong cucumber
- 2-3 TB of sugar
- ¼ cup of water
Bun Vermicelli Noodle Salad

Marinating Meat 1. First is to marinate the pork
- 1 pack of dry Bun Vermicelli noodles
- Condiments:
- Greenleaf or romaine lettuce, shredded (rinse, then cut stem, then cut thinly)
- 3 Cucumbers, peeled and thinly sliced (thin circles)
- Cilantro — 1/2 bunch
- Mint — 1/2 bunch
- ½ cup of peanuts pounded from mortar
- Sweet and sour carrots/daikon (shredded carrots is fine too)
- Please refer to direction #4 below for ingredients to make the “dressing” for the salad.
- Meat marination:
- 3-4 IB Pork shoulder, thinly sliced
- 6 Shallots pounded in mortar
- Salt and pepper for taste
- ¼ cup of soy sauce
- ¼ cup of oyster sauce
Lemongrass Chicken with Tofu Soup

1. Rinse your chicken and cut into several pieces
- 1 whole freshly killed chicken (or a regular chicken is ok)
- 1 lemongrass stalk
- water for boiling chicken
- ~1/4 cup of salt
- optional: 2 TB of Knorr chicken powder
- 1 pack of tofu, chopped in large cubes
Salt and Pepper Shrimp

1.Coat the shrimp in flour and dust off excess flour
- •1 to 2 lb shrimp
- •3 cup oil for frying
- •1 cup all purpose flour
- •1/2 tsp salt
- •1/2 tsp sugar
- •1/2 tsp black pepper
- •1/2 tsp white pepper
- •1/4 tsp garlic powder
- •1/2 cup sliced jalapenos
- •1/2 cup chopped green onions
Chinese Sponge Cake

1.Beat the 3 egg yolks plus 1 whole egg
- Ingredients:
- •3 egg yolks
- •3 egg whites
- •1 whole egg
- •1/3 cup canola oil
- •1/2 cup sifted cake flour
- •1/4 cup fine sugar (see instructions below to make your own)
- •1/2 tsp vanilla extract (optional)
Deep Fried Tilapia Fish

1.Clean the tilapia fish and cut off the fins with a scissor or knife
- •1 pound cleaned tilapia fish
- •1/2 cup green onion chopped
- •1/2 cup ladysthumb chopped
- •1/2 cup cilantro chopped
- •1/2 cup culantro chopped
- •1/4 cup mint chopped
- •1 cup cherry tomatoes cut in half
- •1 lemongrass sliced thin
- •1 tsp garlic minced
- •1 thumb ginger sliced thinly
- •1 tsp oyster sauce
- •4 tbsp oil for the sauce
- •1 tsp salt
- •3 eggs
- •1 cup all purpose flour
- •4 cups oil for frying
