Vegetable Lasagna

Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente
- 1 (16 ounce) package lasagna noodles
- 1 pound fresh mushrooms, sliced
- 3/4 cup chopped green bell pepper
- 3/4 cup chopped onion
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 (26 ounce) jars pasta sauce
- 1 teaspoon dried basil
- 1 (15 ounce) container part-skim ricotta cheese
- 4 cups shredded mozzarella cheese
- 2 eggs
- 1/2 cup grated Parmesan cheese
Bread Pakoda with stuffed potato

Preparing the potato filling: Peel the boiled potatoes
- For the filling:
- 4-5 medium size boiled potatoes (leftover boiled or mashed potatoes comes in handy and works best, especially if you are a lazy person like me)
- 1 green chili, finely chopped
- 2 tbsp finely chopped cilantro/coriander leaves
- ¼ tsp or ½ tsp red chili powder
- 1 tsp amchur powder – add more if required
- ½ cup of mint coriander chutney (optional... you can also use chopped mint and instead about 1 tbsp added in the potato mixture)
- black salt or common salt
- For the outer crisp coating:
- 3 cups besan (chick pea flour/gram flour)
- a pinch of hing
- ½ tsp red chili powder
- ½ tsp garam masala powder
- ½ tsp ajwain/carom seeds
- 6 slices of Brown or White Bread
- water
- salt
- oil for frying

Rolls made from gram flour and sour curd
- 1 cup besan (bengal gram flour)
- 1 cup fresh curds (dahi) mixed with 1 1/2 cups of
- 2 to 3 drops of lemon juice
- 2 tsp ginger-green chilli paste
- 1/4 tsp turmeric powder (haldi)
- a pinch of asafoetida (hing)
- salt to taste
- 3 1/4 tsp oil
- 1 tsp mustard seeds ( rai / sarson)
- 1/4 tsp asafoetida (hing)
- 5 to 6 curry leaves (kadi patta)
- 1/2 tsp finely chopped green chillies (optional)
- For The Garnish
- 2 tbsp freshly grated coconut
- 2 tbsp finely chopped coriander (dhania)
Brocolli Peas Pasta

Brocolli, peas & pasta salad is a crunchy , healthy and delightful tossed salad recipe with the boiled pasta shells...
- 8 ounces corkscrew macaroni or fine noodles , broken up
- 6 broccoli florets (about 1 1/2 cup)
- 20 snow peas tips and strings removed (about 1 cup)
- 1/4 cup salad oil
- 3 tbsp rice vinegar
- 2 tbsp sugar
- 2 tbsp soy sauce
- 1 tsp grated ginger (adrak)
- 1 tsp chilli oil or several dashes bottled hot pepper sauce
- 1 small cucumber, quatered lengthwise and sliced
- 2 medium carrots, julliened
- 1 medium yellow and/or green sweet pepper, cut into thin strips
- 3/4 cup thinly sliced radish (mooli)
- 1/2 cup sliced spring onion greens
- 3 tbsp chopped coriander (dhania) or parsley
- 1/3 cup chopped peanuts
Rajasthani gatta Curry

THis is a lightweight dip for breads

- Yoghurt- 1/2Cup
- Water As Needed
- Oi-l 1Teaspoons

Vegetarian Manchurian

Excellent spicy side dish with noodles or fird rice
- for veg dumpling balls:
- 1 cup grated carrot
- 1 cup finely chopped cabbage
- ½ cup finely chopped bell pepper
- ¼ cup finely chopped spring onion/scallion greens
- ½ tsp freshly crushed black pepper or black pepper powder or white pepper powder
- 2 tbsp all purpose flour/maida
- 2 tbsp cornflour
- salt to taste
- for the sauce:
- 2 tbsp onion or spring onion/scallion whites chopped
- 1 tbsp finely chopped celery (optional)
- 1 tbsp ginger
- 1 tbsp garlic
- 1 or 2 green chilies
- 1 tbsp corn flour dissolved in 2 tbsp water
- ½ tbsp soya sauce
- ½ tbsp vinegar – i used balsamic vinegar
- 1 or 1.5 cup water or vegetable stock
- ½ tsp freshly crushed black pepper or black pepper powder or white pepper powder
- salt to taste
- sugar to taste
- some chopped spring onion/scallion greens for garnishing

- 2 cups coconut milk
- 2 cups milk
- 3 tablespoons white sugar
- 1/2 cup Basmati rice
- 1/4 cup raisins
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon rose water (optional)
- 1/4 cup sliced almonds, toasted
- 1/4 cup chopped pistachio nuts
Yellow Squash Casserole

- 4 cups sliced yellow squash
- 1/2 cup chopped onion
- 35 buttery round crackers, crushed
- 1 cup shredded Cheddar cheese

- 3/4 cup milk
- 1/4 cup butter, melted

Stuffed Peppers

1. Preheat oven to 350°F
- 4 large red bell peppers, halved
- 2 Tbs. vegetable oil
- 1 large onion, chopped (2 cups)
- 4 tsp. curry powder
- 1 Tbs. garam masala
- 2 tsp. grated fresh ginger
- 1 cup basmati rice
- ¼ cup red lentils, rinsed and drained
- ½ tsp. salt
- 1½ cups cooked chickpeas or 1 15-oz. can chickpeas, rinsed and drained
- 2 large carrots, finely diced (1 cup)
- 1 cup green beans, coarsely chopped
- ½ cup raisins or dried currants, optional
- ½ cup unsalted peanuts or cashews, coarsely chopped
