Spicy Dish from Bengal, East India
- Baby potatoes – about 20
- Asafetida – ¼ tsp
- Cumin seeds – ½ tsp
- Fennel seeds – ½ tsp
- Bay leaf – 1
- Green chilies (chopped) – 2
- Tomatoes – 2 large (chopped)
- Turmeric powder – ½ tsp
- Cumin powder – ½ tsp
- Coriander powder – ½ tsp
- Ginger paste or grated ginger – 1 tsp
- Red chili powder – ½ tsp
- Sugar – ½ tsp
- Garam masala – ½ tsp
- Sour curd/yogurt – ¾ cup
- Cilantro – 2 tbsp (chopped)
- Oil/ghee – 3 tbsp
- Salt – to taste

- For the filling
- Green peas (fresh or frozen) – 3 cups
- Green chilies – 3
- Ginger paste or freshly grated ginger – 1 tsp
- Asafetida – ¼ tsp
- Sugar – 1 tsp
- Roasted Cumin powder – 1 tsp
- Ghee /oil – 1 tbsp
- Salt - to taste
- For the kachori
- Whole wheat flour – 1 ¼ cup
- All Purpose flour /Maida– 1 ¼ cup
- Rava/Semolina- 2 tbsp
- Besan/chick pea flour/ Kadalai maavu – 3 tbsp
- Oil – 1 tbsp Plus more to deep fry
- Salt – ½ tsp
EastIndian Sweet Safron Rice

- Basmati Rice - 250 gm
- Milk - 1/2 cup
- Saffron - 4-5 strands
- Whole Garam Masala (Hot Spice Mix) - ( 2 cloves, 2 cardamom, 1/2 inch cinnamon stick, 2 black peppercorns)
- Sugar - 3-4 tbsp (can vary if you like the rice more sweet)
- Ghee - 4 tbsp
- Raisins (Kismis) - 15-20
- Cashew - 4-5
- Coconut - 3 tbsp (chopped in small pieces-optional)
- Almonds - 3-4
- Saffron Food colouring - 1 tsp
- Kewra/vanilla essence - 1/2 tsp(optional)use specially if using regular rice

- 1. 1/2 bowl Onion chopped
- 2. 1/2 bowl chopped tomatoes
- 3. 1/2 bowl chopped cabbage
- 4.4 small buns, each cut into half breadth wise
