Preparation
Step 1
- Wash and dry the salad. Slice the chicken breasts.
Step 2
- Slice the goat cheese
- Mix all ingredients in a bowl.
Step 3
- Add the croutons.
- Toast the pine nuts in a dry place in a pan for 2 to 3 minutes.
Step 4
- Sprinkle over the salad.
- Add dressing just before serving.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
