Ingredients
- 1 diced onion
- 2 tsp. grated ginger
- 1 clove crushed garlic
- 1 diced chilli or bell pepper
- 1tbls. curry powder
- 2tbls. olive oil
- 2 lb cubed butternut
- 2 cubed potatoes
- 1/2tsp. mustard seeds
- 1/2tsp. fennel seeds
- 1 cup coconut milk
- 1 cup water

Preparation
Step 1
saute the onions and herbs in the olive oil.
Step 2
Add potatoes and squash for about 2 minutes and add water and coconut milk.
Step 3
Cook uncovered until tender (about 15 minutes). Season to taste and serve with shredded coconut and freshly chopped coriander for garnish.
you can play with the spices (cardamom, cumin, turmeric, paprika) and also add other veggies like broccoli or lentils and broth.
