Thai Green Curry

This is a classic curry dish that I learned how to make while in Thailand.

Ingredients

  • 8 mushrooms, chopped
  • 1 sweet onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 banana peppers, chopped
  • 1 cup sweet corn
  • 1 tbsp coconut oil
  • 1 tbsp green curry paste
  • 2 tsp lemongrass paste
  • 1 tsp ginger, minced
  • 1 tbsp garlic, minced
  • 1/4 cup lime juice or more
  • 1 can coconut milk
  • 1 tsp coconut extract
  • 2 tbsp soy sauce
  • 1 tbsp Braggs Aminos
  • 1/3 cup brown sugar
  • 2 Thai chilies, sliced thin
  • 1/4 cup cilantro, chopped

Preparation

Step 1

Caramelize mushrooms, onions, garlic, and ginger.

Step 2

Add remaining vegetables to pan, cook 5 minutes.

Step 3

Add remaining ingredients, simmer 15 minutes. Add thai chilies and cilantro 2 minutes before finishing.

Serve over rice or glass noodles.
