Ingredients
- 3 large chicken breast de-bone
- 2 potatoes diced
- 1 can of chickpeas (pour out juices)
- 1can of diced tomatoes
- 1-2 tbsp of olive oil
- Pinch of salt and pepper on each side of chicken
- Half of a medium onion diced
- Half a lime or 2 tbsp of lime juice
- 1 tbsp of oregano
- 1 or 2 tbsp of achiote spice
- 1 or tbsp of minced garlic
- 2 tbsp of cilantro

Clean the chicken first. Wash with water and then dry. Rub lime juice and salt and pepper on chicken. Heat up a medium non stick pot and add olive oil. Throw in chicken. Wait until chicken starts browning and then add garlic and onions with oregano spice. Wait until onions have softened and browned, next add tomatoes and chickpeas with potatoes. Lastly add achiote spice cover with lid. Wait 45 to 60 minutes. Stir every 20 minutes. Once done add a bit of cilantro for freshness and serve over rice if desired

INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
