Ajiaco (Colombian Chicken & Potato Soup)

Ajiaco is a hugely popular dish in Bogota, Colombia’s capital city but also exists in Cuba and Peru, where its preparation varies. The Colombian version comes in the form of a creamy chicken and potato soup, bulked up with corn and other veggies or garnishes.
