Treat yourself... This beautiful blueberry cake is super easy to make!

Ingredients
- Sugar
- 2 Eggs
- Vanilla
- Mascarpone
- Oil
- Flour
- Baking Soda
- Salt
- Lemon zest
- Blueberries (fresh or frozen)
- Powdered sugar
Method
- Preheat the oven to 350° F.
- In a bowl, combine the sugar and eggs and beat with a mixer.
- Add the vanilla, mascarpone, and oil, and beat again.
- In a separate bowl, combine the flour, baking soda, salt, and mix until thoroughly integrated.
- Gently sift the flour mixture in with the wet mixture, and mix.
- Add the lemon zest and fold in.
- In a buttered cake dish, pour in a layer of cake mix and top with blueberries, alternating until all the batter is used up.
- Bake in oven for 30 minutes.
- When golden and ready, remove from oven and let cool for 10 minutes.
- Dust with powdered sugar.
- Serve... and enjoy!

Chocolate Beetroot Cake
Looking for something indulgent? These velvety chocolate beetroot cakes will hit the spot.
INGREDIENTS
- 1.3 cups beetroot
- 2 eggs
- 2 tablespoons oil
- Juice of 1/2 lemon
- 4/5 cup flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- Melted dark chocolate
METHOD
- Preheat the oven to 350° F.
- Put the beetroot, eggs, oil and lemon juice in a food processor, and blend until smooth.
- In a bowl, whisk together the flour and sugar.
- Add the blended beetroot mixture, and mix until smooth.
- Add the baking powder and mix until fully incorporated.
- Pour the batter into silicone cake moulds.
- Bake for 30 minutes, or until you a pick comes out clean.
- Top with melted dark chocolate, and enjoy!
