For many of us, eggs are a vital part of our breakfasts, brunches, and even dinners. Whether it's fried, scrambled, or boiled – it makes the perfect addition to our plate. But have you ever noticed the prices among the different types of eggs at the supermarket, namely between brown and white eggs? How can white eggs be cheaper than the deceivingly similar brown eggs? Are brown eggs healthier? Do they have more nutrients?

Not at all! The real reason why brown eggs can be more expensive than white eggs is due to the size of the chicken who lays the eggs. Chickens with white ear lobes and feathers typically lay white eggs, whereas chickens with reddish-brown earlobes and feathers lay brown eggs. The latter are usually larger, so they need more food and are therefore more expensive to keep. Predictably, that can often mean an increase in the price of the eggs they lay.

Interestingly, that's the only real difference between these two types of eggs. The nutritional value is the same regardless of the color of the egg. In fact, this feature is influenced, rather, by whether or not it comes from a happy, free-range, pasture-fed chicken. Eggs from free-range chickens are more expensive, of course, but they are also more nutritious than their alternatives. Not to mention, the hens have a much better life in this situation.

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
