5. Baking Flat Cookies

Trust the recipe. When it says to cream your butter and sugar together, it's for a reason. Along with your leavening agents, it ensures your cookies have a nice height to them; no flat cookies here! How do you know when it's properly creamed to perfection? Your butter and sugar mixture will become noticeably lighter. If you're using white sugar, the mixture will be off-white; if you're using brown sugar, it will become sand colored.
