Now you've made the perfect guacamole, how do you stop it from browning too quickly? Despite the old wife's tale, putting the avocado pit in with the guac won't stop it from becoming oxidized, but there is another way. Try pouring one or two tablespoons of water on top of the guacamole, then cover it with clear plastic wrap, pressing it onto the surface of the dip to create an oxygen seal. This is a very effective and easy way to keep it green for up to three days.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
