Apricot Salsa Quesadillas

Salsa can be more than just a garnish. Use it as a filling in this easy-peasy vegetarian recipe, featuring cheesy quesadillas stuffed with a quick tomato, apricot and bell pepper salsa. It's got a hint of sweetness from the fruit and a bit of ground cinnamon that combines surprisingly well with smoky paprika and tangy lime juice.
