Using Only Breast Meat in Chicken Noodle Soup

While there's nothing inherently wrong with using breast meat in your chicken noodle soup, it's not doing anything for the flavor. Breast meat is certainly leaner but also pretty bland. You can use pretty much any parts of the chicken in your soups, but your best bet is probably going to be bone-in chicken thighs, which are richer in flavor, more tender and juicy. For best results, use a combination of breast and thigh meat.
