Peanut Sauce - Indonesia

Popular all over the world, peanut sauce or satay sauce, is of Indonesian origin and made from ground roasted or fried peanuts with a variety of seasonings added to it. One should always have a good, authentic recipe for peanut sauce on record for delicious Asian dishes, including satay (skewers), noodle stir-fries, grilled meat or veggies. It can also be incorporated into savory salad dressings or used as a dipping sauce for fresh spring rolls.

Ingredients:

  • 1 tbsp vegetable oil
  • 2 garlic cloves, peeled and crushed
  • 1 bird's eye chili, quartered
  • 1/2 cup (125g) unsalted roasted peanuts or 1/2 cup (125g) store-bought peanut butter
  • 1 tbsp coconut sugar
  • 2 tbsp lime juice
  • 1/4 tsp lime zest
  • 2 tbsp sweet soy sauce
  • Salt
  • 1/2 cup (125ml) boiling water

Instructions:

  1. Heat the vegetable oil in a frying pan over medium-high heat. Add the garlic and bird's eye chili to the pan and fry for 2-3 min. Let cool briefly and roughly chop both the garlic and chili.
  2. In a food processor, blend the unsalted roasted peanuts until they become creamy peanut butter—or use store-bought peanut butter.
  3. To the blender, add the fried garlic and chili, coconut sugar, lime juice and zest, sweet soy sauce and a pinch of salt. Blend until smooth and well combined.
  4. Transfer the peanut sauce to a saucepan over medium-high heat. Slowly stir in the boiling water until it reaches the desired consistency. Serve warm or at room temperature.
