Serving Bolognese Sauce Over Spaghetti

We're about to burst your bubble: spaghetti bolognese is not an authentic Italian dish. Don't misunderstand, Bolognese sauce or ragu alla bolognese, is 100% Italian, but it's not supposed to be served with spaghetti. Similar to American "meat sauce", it's a tomato-y, meaty concoction made with ground beef and/or pork, pancetta, onions, carrots, celery, red (sometimes white) wine, olive oil, canned chopped tomatoes, bay leaves, salt and pepper. Traditionally, it's served on a bed of tagliatelle bed because the noodles have a wider, flat surface that absorbs the meat sauce better than thin spaghetti strands. Italians may also use pappardelle or fettucine, if they don't have tagliatelle on hand.
