The Crispy Guide to Homemade KFC Chicken

Homemade KFC potatoes and gravy
KFC's mashed potatoes and gravy are always a good idea. You can even dunk your crispy homemade original chicken pieces in the iconic side.
Ingredients for 6 servings
For the mashed potatoes
- 2 lbs russet potatoes, peeled and cubed
- 3/4 tbsp salt
- 4 tbsp unsalted butter, cut into cubes
- 1/3 cup heavy cream
- 1/2 cup whole milk
- Freshly cracked black pepper
- Salt, to to taste
For the gravy
- 2 1/4 cups boiling chicken stock
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/4 tsp freshly cracked black pepper
- Salt, to taste
Instructions
- To make the mashed potatoes: Add the potatoes and salt to a large pot, then add water until the potatoes are submerged by 2 inches.
- Bring to a boil and cook for 15 min. until the potatoes are soft and fork tender.
- Drain and let rest for a few min. Then transfer to a serving bowl and set aside.
- Melt the butter in the same saucepan over medium high heat.
- Stir in the heavy cream and milk, then bring to a gentle simmer. Remove from the heat.
- Purée the potatoes with a potato masher. Add the hot butter/cream/milk mixture, the garlic powder, pepper and salt to taste.
- Stir gently to combine.
- Taste and adjust the seasonings, if necessary.
- Set aside and keep warm.
- To make the gravy: In a small saucepan over medium heat, melt the butter.
- Whisk in the flour, garlic powder and pepper to make a roux.
- Gradually pour in half of the hot chicken stock, whisking constantly.
- Once it takes on a thickened texture, pour in the remaining stock and stir well to incorporate.
- Continue stirring for about a minute or two longer, until you get a gravy-like consistency.
- Taste and adjust the seasonings, if necessary. Don't add too much salt, as the stock is likely already seasoned.
- Serve over the mashed potatoes.
