Homemade KFC buttermilk biscuits

Fluffy, flaky KFC-style buttermilk biscuits can be yours in less than 30 minutes with a short list of pantry staples. They'll quickly become a favorite side for any down-home meal.

Ingredients for 6 servings

  • 1 cup all-purpose flour
  • 3/4 tsp salt
  • 1/2 tbsp sugar
  • 2 tsp baking powder
  • 1 pinch baking soda
  • 1 1/2 tbsp vegetable shortening
  • 2 tsp butter-flavored vegetable shortening
  • 1/2 cup buttermilk
  • Milk, for brushing
  • Unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, stir together the flour, salt, sugar, baking powder and baking soda.
  3. Cut in the vegetable shortenings with a pastry blender until incorporated, and you get a rough, crumbly texture.
  4. Add the buttermilk and stir until the dough becomes soft and sticky.
  5. Turn the dough out onto a floured surface, and knead lightly until the stickiness is gone. Divide the dough in half. Roll each dough into circles about 1/2 inch thick.
  6. Cut out 2-inch size biscuits and place them on a baking sheet. Combine any dough scraps and roll out again to make one or two more biscuits.
  7. Brush the tops of the biscuits with milk.
  8. Bake for 15 min. in the preheated oven  until golden brown.
  9. Brush with melted butter to serve.
