Waiting too long to take the cookies out of the oven

Hot cookies fresh from the oven will continue cooking until they cool down. This means that if you wait until they look perfect to take them out of the oven, you'll end up with overdone cookies that are dried out and dense. Instead, remove them as soon as you see the edges turning darker and let the cookies rest for a few minutes on the baking sheet before transferring to a cooling rack.
