The canning process creates a sanitary environment to reduce or even eliminate the chance of dangerous bacteria spoiling the contents, but once the protective seal is broken, toxins can enter. Dents in the can, even if there are no visible punctures can actually damage the internal protective coating. This coating prevents the food from coming in direct contact with the metal—which can cause an unpleasant or even toxic chemical reaction.
