Have you ever eaten bruschetta and felt like your mouth got scraped up because the tomatoes were dry and the bread was too hard? That's no fun. The important things to remember: although bruschetta is referred to as Italian "toast," the authentic version calls for grilled, thick slices of bakery-style bread. It should be lightly browned (by no means burned), and you need to choose juicy tomatoes and high-quality olive oil for the best-tasting results. The classic recipe is composed of tomatoes, fresh basil, olive oil and garlic, although you can get creative with the toppings of your choice.
