Steak

Steak seems simple, but the truth is there are myriad ways to get it wrong. For starters, never cook steak straight from the fridge. It should be sitting out at room temperature for at least 40 minutes to ensure even cooking. Otherwise you could end up with a burnt outside and raw inside. Be sure to generously season both sides. Also, don't put a steak into a cast-iron skillet or on a grill that's not smoking hot. You'll end up with steamed, not seared steak. How many times you should flip a steak is up for debate, but usually one time should suffice to get the results you want. Most importantly, let the steak REST for at least 10 minutes before serving to lets its juices re-centralize. Then re-season and serve.
