Don't Skimp on the Lime Juice

A bit of citrus goes a long way in a tasty guacamole, not to mention lime juice helps to preserve the avocado from premature browning. Before you cut into the lime, roll it gently between your hands and a flat surface to help release the juices. Use a juicer if you have one so you don't let any of it go to waste. If you find yourself without limes, it won't be the "perfect" guacamole, but you can sub freshly squeezed lemon juice in a pinch. Whatever you do, don't use the prepared lime juice that comes in plastic bottles.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
