One Pot Miso Chicken Rice and Morels

Earthy morels are a slightly more sophisticated spring/summer veggie, but you'd be surprised at all the delicious things you can make with them. Take a cue from this Asian-inspired recipe that incorporates the honeycomb-textured mushrooms into a miso-flavored chicken and rice dish. While it sounds a bit fancy, it's actually super easy to make and cooks up all in one pot. It's best to make in early June!
