No-Bake Strawberry Cheesecake

This delicious cake is perfect for a springtime dessert! Here's how to make it:

Ingredients (for 6 servings): 

  • 1 stick of butter
  • 9 oz. butter cookies
  • 3/4 cup heavy cream, chilled
  • 12 oz. cream cheese 
  • 1 cup powdered sugar
  • 1 lb. strawberries 
  • Chopped pistachios


Preparation:

  1. Melt the butter in the microwave. Roughly break up the cookies and add to a blender along with the butter. Pulse into fine crumbs.
  2. Spread the crust onto the bottom of a 9.5-inch springform pan and place in the fridge for 10 min.
  3. Place a mixing bowl in the fridge (or even better, the freezer) for 30 min. Meanwhile, wash and slice the strawberries.
  4. Using an electric hand mixer, whip the heavy cream in the previously chilled bowl until stiff peaks form. Add the cream cheese and powdered sugar and continue beating until well combined, about 2 min. more.
  5. Add half of the cream mixture on top of the crust, and smooth out the surface with a metal spatula. Spread a layer of strawberries on top. Spread the remaining cream mixture over the strawberries, and smooth out the surface again. Let the cake firm up in the fridge for at least 4 hours.
  6. Before serving, garnish the cake with the remaining strawberries and sprinkle with chopped pistachios.
  7. Enjoy!

Ingredients

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
