Strawberry Chutney

This sweet and tangy chutney pairs particularly well with chicken. Pro tip: you can also replace the salt with smoked salt, which gives the sauce an extra depth of flavor.

Ingredients:

  • 2 1/4 lb. strawberries
  • 1/2 cup white balsamic vinegar
  • 2 tsp salt 
  • 2 tbsp pink peppercorns
  • 1 2/3 cup honey
  • 1 large red onion, halved
  • 1/2 bunch of fresh basil, finely chopped


Preparation: 

  1. Wash and hull the strawberries before adding to a blender. Mix for 10 seconds with the balsamic vinegar, salt, pink peppercorns and honey.
  2. Cut the onion into fine strips and add to a saucepan. Add the strawberry mixture and simmer over medium heat for 15 min.
  3. Stir in the basil with a wooden spoon. While still hot, pour the chutney into clean and hot-washed screw-top jars. Tightly close the jars and leave them upside down to cool.

Ingredients

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk
  • Almond slivers
  • Powdered sugar

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
