Eton Mess

Nothing says garden party like an Eton Mess! Perfect for weddings or spring birthday parties, these individual Eton Mess' are the perfect celebratory dessert. A winning combo of crunchy meringue, pops of sweet strawberry, and whipped cream best served outside in the sunshine.

Ingredients for 4 servings:

  • 1 lb. fresh strawberries
  • 1/2 medium lemon
  • tbsp sugar, divided
  • 10 store-bought baked meringue cookies
  • cups (480 g) heavy cream

Instructions:

  1. Wash, hull and dice the strawberries. Add to a bowl. Grate the zest of the lemon and set aside. Juice the lemon until you have 1 tbsp of juice. Add to the strawberries along with 1 tbsp sugar. Toss to coat.
  2. Place the meringue cookies in a Ziploc bag and crush with a rolling pin.
  3. Add the heavy cream and remaining sugar to a bowl and whisk to combine. If using an electric hand mixer, beat on medium speed until soft peaks form.
  4. Add 2/3 of the strawberries and the crushed meringues to the whipped cream, and fold together with a spatula. Divide the mixture between 4 small glasses. Garnish with the remaining strawberries.

Craving sweet? This rustic cherry tart is easy, quick and delicious!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
