Is there a heartier way to start the day? We don't think so. Originally a way for farmers to use all their remaining scraps and trimmings, this big breakfast is inexpesive and full of protein. Cook it up and you'll feel ready to take on anything this weekend!
Ingredients (for 4 people):
4 strips of bacon (cut into 1-inch pieces)
1/2 onion
1/2 tsp salt
1/4 tsp pepper
6 cups hash brown (cubed and frozen)
1/4 cup water
1 clove garlic (minced)
4 eggs
1 cup shredded cheese
2 tbsp scallions (sliced)
Instructions:
In a large skillet, cook bacon over medium-heat until crisp. Remove bacon and set aside, but reserve 2 tbsp of dripping in the skillet.
Chop the onion and add to skillet. Allow to saute, before adding the hash brown. Stir so that the dripping covers both. Cook for 5 min.
Add the water and cover. Cook for an extra 15 min. until the ingredients have softened. Stir in the garlic and cook for an extra 5 min. Add the salt and pepper.
Make 4 wells in the mix, and crack an egg in each spot. Cover skillet again for 10 min. In this time, the egg whites should set.
Immediately sprinkle over cheese, bacon, and green onions.
