Spicy Salmon Burger

Burgers don't have to aways be beef, especially during summer when you're after something a little lighter. These salmon treats are the perfect answer, and are great paired with lemony mayonnaise and homemade fries. 

Ingredients (for 4 people):

  • 15 oz. canned salmon
  • 2 eggs
  • 1 tbsp lemongrass cooking paste
  • 1 tbsp red curry paste
  • 1/2 tbsp brown sugar

Instructions:

  1. Drain the canned salmon, and flake apart with a fork.
  2. In a large bowl, mix together the remaining ingredients.
  3. Form into four patties, and set aside.
  4. Warm 1 tbsp of oil in a skillet over medium-high heat. Put the patties in the skillet, and fry for 5 min. Flip the patties and fry for another 5 min.
  5. Serve in a bun if you prefer, and top with a dollop of lemony mayonnaise or yoghurt. A tangy slaw, homemade fries, or an avocado salad work well as sides.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped

  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
