Shrimp is deliciously tender - and tasty! They're a favorite in Spanish cuisine, particularly in paellas. Grill them in a light garlic marinade and serve with a wedge of lemon and you'll soon be whisked away to a beach on the Spanish coast.
Ingredients (for 4 people):
28 oz. shrimp (deveined and peeled)
5 tbsp olive oil
5 cloves of garlic
1 tsp chilli flakes
2 lemons (juiced)
Pinch of freshly ground black pepper
1 bunch fresh parsley
Instructions:
Wash the parsley, shake dry, and chop finely. Peel and chop the garlic and chop finely too.
In a bowl, combine the oil, garlic, lemon juice, chili flakes, ground pepper, and parsley. Mix well.
Place the shrimp in the marinade and cover completely. Leave to soak well in the refrigerator for 30 mins.
Prepare and slightly grease a hot grill (you can also put them on an aluminum tray on the grill). Brudh the remaining marinade over the shrimp during the grilling process. Grill the prawns for 3 mins. on each side until they're pink.
