Pizza from the Grill ... just like in Italy?
Pizza from the grill? It might be questionable, and we don't know if the Italians would be impressed, but it's definitely worth a try!
The best way to prepare grilled pizza is in a grill with a lid. This allows the flavors to develop nicely. If you have a pizza stone, that's even better!
Ingredients:
For the dough:
- 3 cups flour
- 1 tsp sea salt
- 5 cups water
- 2 tbsp olive oil
For the topping:
3/4 cups strained tomatoes
1 tbsp tomato paste
1 tbsp olive oil
1/2 tsp dried oregano
Pinch of salt
Pinch of pepper
10 cherry tomatoes
1/2 cup mozzarella (shredded)
Handful of olives (black or green)
Handful of fresh basil
Instructions:

Mix the flour, salt, and yeast in a bowl. Add the lukewarm water and olive oil, and knead everything into a smooth dough.

Cover the dough with plastic wrap and let it rise for an hour.

Mix together the strained tomatoes, tomato paste, olive oil, oregano, salt and pepper. Chop the olives and cherry tomatoes.

Roll out the dough. If you don't have a pizza stone, divide the dough into several portions and roll them out thinly.

Fire up the grill! Put the dough on the pizza stone, or the pizzas on the grill, and close the lid. Flip after 3 mins.

Spread the tomato sauce on the pizza base and top with the ingredients, then immediately close the lid and let it bake for 10 mins. The heat from underneath provides a crispy part and the closed lid allows the ingredients to cook gently and adds a slight smoky flavor.

Garnish with fresh basil and serve.
