Delicious Cold Salads to Enjoy During Summer

Chicken Salad with Mint

This salad not only refreshing, but filling too! Why not try it for lunch or a light dinner.

Ingredients (for 4 people):

  • 2 medium potatoes
  • 2 green apples
  • 2 cooked chicken breasts
  • 7 fresh mint leaves
  • 1 cup Greek yogurt
  • Salt and pepper (for seasoning)

Instructions:

  1. Peel and dice the potatoes. Boil them for 25 mins. then quickly plunge them in cold water.
  2. Add them to a salad bowl. Peel the apples and dice them too, then add to the salad bowl with the potatoes.
  3. Dice the chicken breasts, and add to the salad bowl too.
  4. Add the Greek yogurt, season with salt and peper. Mix. 
  5. Finally, finely chop the mint and add to the salad Ajust the seasoning if necessary, and refrigerate for 30 mins. before serving.

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
