Delicious Cold Salads to Enjoy During Summer

Chickpea Salad

Chickpeas are so versatile that it's not for nothing that vegans often eat them. Regardless of your type of diet, it never hurts to vary it with a tasty and nutritious legume, so let's take a look at this recipe.

Ingredients (for 4 people):

  • 1 large jar of cooked chickpeas
  • 2 ripe avocados
  • 1 small onion
  • 1/2 package alfalfa sprouts
  • Juice of 1 lemon
  • Salt and pepper (for seasoning)
  • Paprika powder (for seasoning)

Instructions:

  1. Using a spoon, empty the avocado pulp into a salad bowl. Add the lemon juice, season with salt and pepper, and mash with a fork. 
  2. Add the finely chopped onion and the chickpeas. Mix well.
  3. Sprinkle the alfalfa sprouts directly over the salad, season with salt and pepper, and add a touch of paprika. 
  4. This salad works super well in a sandwich as pictured, so why not try it out? Yum!

  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
