Delicious Cold Salads to Enjoy During Summer

Classic Layered Salad

This salad's a classic! Not only is it tasty, but also pleasant on the eye with its bright colors. In layers, add the following ingredients to a glass salad bowl.

Ingredients (for 4 people):

  • 1 cup cooked pasta
  • 1 cup of mayonnaise
  • 1 large can of tuna
  • 1 small jar of red peppers
  • 1 small jar of corn
  • 2 hard-boiled eggs (grated, for garnish)

Layer the ingredients in whichever way you like, but it's usually best to have the pasta at the bottom and the grated cheese at the top. Enjoy!

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
