Delicious Cold Salads to Enjoy During Summer

Egg Salad

The hard-boiled egg salad is a delicious option at lunch, to put into sandwiches, or even to enjoy on a slice of toast. What's more, it's super healthy!

Ingredients (for 4 people)

  • 8 eggs
  • 1/4 cup mayonnaise
  • 1/4 cup chopped dill
  • 2 tbsp chopped chives
  • 2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper

 

 

Instructions:

  1. Add the eggs to a saucepan and fill it with cold water. Bring the water to a boil, and immediately remove from the heat. Cover and let the eggs stand for 10 mins. Remove the eggs from the water, and let them cool down.
  2. Peel the eggs before slicing them. Add them to a bowl. 
  3. Stir in the mayonnaise, dill, chives, Dijon mustqrd, salt and pepper. Mix well.
  4. Refrigerate for 30 mins before serving.

  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
